INGREDIENTS
500g organic lean mince
1 can organic diced tomatoes
1 zucchini grated
1 carrot grated
1 brown onion chopped
1/2 cup mushrooms chopped
1 celery stick chopped
1 tbs olive oil
1 tsp dried oregano
2 garlic cloves crushed
1/3 cup tomato paste
2 cups organic beef stock
400g spaghetti
salt & pepper
fresh basil
METHOD
Heat the oil in a large heavy-based saucepan over medium heat. Add the onion, carrot and garlic, cook until the onion and carrot start to soften.
Add the mince stir with a wooden spoon and break up any lumps. Cook until the mince browns then add the beef stock, diced tomatoes and tomato paste. Next add in the mushrooms and zucchini, stir until the veggies are tender. Finally add the oregano, basil and salt and pepper, then allow to simmer for 10 minutes on a low heat.
