BREAKFAST BURRITOS

INGREDIENTS: (to make 4-6)

8 pieces of shaved ham or cooked bacon

12 spinach leaves

2 small tomatoes

2 cheese slices

4 eggs (I make a flat omelette I can cut into rectangles)

4 organic quinoa wrap ( any wrap will work)

avocado (optional)

bbq or tomato sauce (optional)

olive oil spray (I use rice bran)


METHOD:

Spray a saucepan with oil and make a flat four egg omelette. Then cut up into 4 rectangles. Then assemble burritos using all the ingredients. Fold in the two sides and roll up tightly, then toast so they don't fall apart in your little ones hands!



*tip you can prepare these the night before. Just wrap them in glad wrap and pop them in the fridge. When ready to eat just pop it in the toaster, and you are good to go. They can also make a yummy, easy lunch or dinner!


This ingredient guide is rough you can always make more or less depending on the size you make your burritos.
