SHEPERD'S PIE

INGREDIENTS


1 tablespoon olive oil

500g organic beef mince

1 brown onion finely chopped

1 carrot, peeled, finely chopped

2 celery sticks finely chopped

1 tablespoon organic tomato paste

salt & pepper

2 tablespoons plain flour

1/2 cup tasty cheese

500ml organic beef stock

1 tin corn

1/2 cup of peas

2 tablespoon worcestershire sauce

2 large sweet potatoes peeled & chopped

40g butter

125ml (1/2 cup) milk


METHOD


(while you are cooking the beef mixture boil the sweet potatoes)

Preheat oven to 180c

Heat oil in a large saucepan, then add onion, carrot and celery and cook until the veggies soften

Add the beef mince and cook, stirring to break up any lumps, for 5 minutes or until the beef changes colour.

Add the flour and cook, then add the beef stock tomato paste and and worcestershire sauce. Then add the peas and corn. Bring to the boil, then reduce heat to cook. Stir until your mixture thickens. Pour into a a casserole dish and wait until it cools.


Mash the sweet potato with butter salt and milk and allow to cool.

Top the meat filling withe sweet potato mash, sprinkle with grated cheese and then brush lightly with melted butter!


Bake for 25-30 minutes or until golden. Enjoy!
