1 tin of red salmon

1/2 cup breadcrumbs

1 tbs rice bran oil

1 cup mashed sweet potato

4 green onions chopped

1 egg

salt & pepper


Add the canned salmon, sliced green onions, lightly beaten egg, dried breadcrumbs, salt & pepper, and mashed sweet potato in a bowl. Mould the mix into 8 patties.


Heat two tbs of oil (I use rice bran oil) in a pan and cook patties until golden brown on each side. Alternatively you can bake them, spray the tray with oil, cook for 15 minutes then turn them and cook for another 5 minutes.

TIP: Make 4 larger ones and make salmon burgers!

Serve with salad or veggies.
